pacific swimming sea scallops picked live off the beach in the queen charlotte islands. they are the size of a hockey puck. they are incredible wrapped in bacon stuffed with roasted garlic and bbq'd with a touch of blue cheese and fresh ground black pepper to finish them off.
or fresh pacific red snapper with a roasted red pepper sauce.
or fresh halibut tossed in mashed potato flakes (yes i know sounds weird). sauteed in olive oil until golden brown with a little salt and fresh pepper topped with a slice of orange.
or fresh coho salmon. marinate for roughly 20 mins in canola oil, dark soy, a ton of fine chopped garlic, white pepper,add brown sugar until sweet and the taste, and the juice of one fresh orange. then toss on the grill. the sugar caramelizes and it is delicious
i worked in restaurants for a few years when i was young and i just happen to have a couple houses in the queen charlottes so it's all there and all very fresh.
